Barley Mushroom Casserole

(vegetarian version)

6 tablespoons butter
2 cloves garlic, minced
2 yellow onions, minced
1 pound mushrooms, chopped or sliced
1 cup pearl barley
1/2 tablespoon dried basil
1 1/2 cups vegetable broth
12 oz. beer
salt and pepper to taste
Preheat oven to 375 degrees.

In a 2 quart stove top covered casserole, saute onions and garlic in butter over moderately low heat until soft. Add mushrooms, stir and cook for a few more minutes. Stir in barley and basil. Add vegetable broth. Season with salt and pepper. Bring to a boil. Remove from heat . Cover casserole and bake in oven for 45-50 minutes.

Note: You can substitute chicken broth for the vegetable broth. You can also add cooked chicken to make a full meal.
