Bashed Neeps
You can make this recipe larger or smaller by increasing the number vegetables equally.For 4-6 servings:
1 large rutabaga
2 large carrots
1 large turnip
1 large parsnip
1 large potato
1/4 cup butter
Bring salted water to boil in a large pot. Cut all vegetables into chunks. Keep rutabagas separate from the other vegetables. Begin boiling the rutabagas and carrots first for about 15 minutes. Add the rest of the vegetables and cook until all vegetables are tender (about another 15 minutes). Drain vegetables. Use a hand blender or rotary hand mixer to mash the vegetables with the butter. Add additional salt to taste if needed.
